GNSS receivers listen to satellite signals and derive position and speed from them. That is a one-way, receive-only process; no subscription, SIM, or data plan is involved. Cellular assistance can speed up the first fix by supplying satellite orbit data, but the fix itself does not require it.
What actually affects reception
Sky visibility is the main factor. Anything between the antenna and the satellites slows or degrades the fix.

Which actions need connectivity
Sharing an exported file to a social app, opening the VelocityCam website, and Google Play purchase or restore for Pro need a connection. Nothing about recording does.
Practical advice for no-signal areas
Get your GPS lock before you leave coverage if you can — the first fix is usually the slowest part. Once locked, the phone keeps tracking as long as it can see the sky.
